May 26, 2009 - Guess what? I learned how to make Gyros meat at home by finding recipes on the internet and by speaking to the manufacturer and distributors! The secret is to get your butcher to TWICE GRIND gound lamb and beef. The herb spice mix used is Oregano, paprika, cumin, ground black pepper, kosher salf, a tiny bit of cinnamon or cardamom. Bread crumbs and twice ground fat (lamb is best) are also added. The meat paste is then formed into loaves or cones and then frozen until used. Eureka!
