Jul 9, 2009 - Japapenos are not as hot as some peppers and handling a few as I did, I'm usually okay. But forty, yep that hurts. No doubt gloves should be used for some people as it can affect different skin types, that is for sure. Your actually experiencing a chemical burn from the capsaicin and once you feel it, it is too late to do much. HOWEVER, immediately afterwards wash hands in milk. For the pain hours afterwards it has been suggested to soak hands in 'mud'. Great Question! KtC

Aug 11, 2009 - Thank you. Some are certainly better than others but I try to provide a guidline or an alternative 'spin' on basic foods. We all got to eat. Have a great day! KtC

Aug 13, 2009 - I used your recipe for my Jalapeno poppers just last night and the Jalapenos seemed like they were a little too squishy. Though they were still very good. Got any tips? I was thinking maybe I cooked em for too long or maybe too slow *rubs chin*. Thanks for your help! :D
kooktocook Says:
Aug 14, 2009 - Squishy? Were the peppers fresh? Was the oil prep. (350F)? (a drop of water will fly off the oil). Too long in the oil (at too low temp. I suspect (perhaps). Keep trying. If you are certain it worked as planned, and still squishy let me know. Yep, I hear you. Learn what 'you' like well and move on to next weeks diet. Cheers mate! KtC

Aug 14, 2009 - how much cumin? Cilantro, cheddar to creme cheese ratio? Nice vid but lacking specifics for recipe.

Aug 17, 2009 - Ok, I tried again and they were PERFECT! this time. Just needed a little less cooking time. Thank you again for the help!
kooktocook Says:
Aug 17, 2009 - Great! Yep, the oil/ temp/ time is something to get the hang of. Isn't it always the second time around? Some find them too crunchy (the pepper). Pop in an oven at 350F for 10 minutes after fryig (do not burn). I like them just quickly zapped in the oil myself though. yummy. Thank you for the feedback. cheers! KtC 'try variable cheeses to mix it up'

Jul 9, 2009 - One day I was helping my dad deseed over 40 jalapenos for his canned tuna (yea he makes his own canned tuna), and I soon realized about 30 mins later my hands were on fire. The pain was incredible, and didn't let up until next morning. I noticed you weren't wearing any gloves while deseeding the jalapenos, and I'm just wondering if that has ever happened to you, and if so/not do you have any ideas on how to take the pain away.
