The drinking (in case you've never been to a bar where there are bands, in between sets, THEY DRINK!), is just something to do while they're there. Watch the video and you'll see him, on stage, then walking upstairs and throwing a towel over his shoulder. He's a performer, not just there as some lush, as most people would assume.
