Oct 28, 2009 - We're still using the same 1 lb. container of instant yeast we bought 6 years ago. Can't get more cost-effective than that. Note the video leaves out the second rise. Just for fun I'm trying it the first time without the second rise. It still puffed up but not as much.

Oct 30, 2009 - Did you let the dough rest for 1 hour before placing it into the oven? In the video the baker doesn't say to do that, but most recipies for bread include letting the dough rest (proof) for one hour before putting it into the oven. That last hour allows for the glutten to rest again and the yeast creates more gas; that extra gas allows the bread to increase in size.

Nov 4, 2009 - Add flour to it. Notice at 2:16 how much flour is on the dough and table. That's the secret to getting it workable. Remember though, a little goes a long way. Add small amounts of flour or water, whichever you need.
